A pancake type of morning...

To start off your morning sweet and delicious, let me share with you a fabulous pancake recipe.  If you love pancake mornings like Miss B and I, then you will definitely enjoy these divine hotcakes!!  Momma introduced us to these a year ago. The recipe is from Ina Garten Barefoot Contessa Family Style Cookbook.  


Sour Cream Pancakes

1 1/2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 1/2 teaspoons kosher salt
1/2 cup sour cream
3/4 cup plus 1 tablespoon milk
2 extra-large eggs
1 teaspoon pure vanilla extract
1 teaspoon grated lemon zest
Unsalted butter
Fruit topping is optional...I enjoy bananas and blueberries

In a medium bowl, sift together the flour, sugar, baking powder, and salt.  Whisk together the sour cream, milk, eggs, vanilla, and lemon zest.  Add the wet ingredients to the dry ones, mixing only until combined.
Melt 1 tablespoon of butter in a large skillet over medium-low heat until it bubbles.  Ladle the pancake batter into the pan.  Cook for 2 to 3 minutes, until bubbles appear on top and the underside is nicely browned.  Flip the pancakes and then cook for another minute, until browned.  Wipe out the pan with a paper towel, add more butter to the pan, and continue cooking pancakes until all the batter is used.  Serve with sliced bananas, butter and maple syrup.

Now, of course if you have a busy schedule and have absolutely no time to make a homemade recipe for pancakes...Bisquick is a great option :0)  Save the homemade for Saturday mornings with your munchkins.  Let them help you.  They take such pride in the small things like adding in the flour or milk (of course with mommy's help). These are the memories that last, believe me, Miss B loves pancake time!!!  "I hep' you, mommy!"

Just this past weekend, Mr. Adkins drove us to TN to visit with Papa, Huney, TeeTee (Miss B's Uncle ~ My brother) Nay Nay (Miss B's Aunt ~ My Sister-in-Love).  While there Miss B finally understood that Nay Nay had a baby in her tummy. (Yes, I will be an aunt in December ~ CANNOT WAIT!) Okay, back to the story.   She would walk up and kiss the tummy or talk to him. So precious.  Well, when came home to NC I was tucking her into bed.  Instead of "Nigh Night, mommy" she said "I wuv u baby, mommy" and patted my belly.  She said "Baby, in you shirt??" I started laughing so hard and replied "Oh no, not mommy...Aunt Nay Nay" she just giggled.  Children sure can put a smile on your face!

  1. First! I LOVE that pancake receipe. Never have tried to make it, but sure do love when Huney makes them and adds "bo do-do's" (blueberries).

    That's so funny! I love that she would see me in the mornings and say "Oh good morning Shay Shay, um baby? Keesh?" So I would squat down and she was either pat my tummy or give my belly a kiss. I wonder what she's going to think when he's finally out of my belly? :)

  2. They are very easy! Little man will love them :0) Speaking of little man, Miss B will be such a "mommy" to him! I can just see her now. Cannot wait :0)
